Non-alcoholic beer, pale, semi-dark and dark draught beer and lager are made. The non-alcoholic beer has a minimal alcohol content, high drinkability and a faint wort aroma. The pale draught beer is golden yellow, medium attenuated and medium bitter. The semi-dark blended draught beer is medium dark with a slightly caramel-like, full taste, the dark draught beer dark brown with a pronounced caramel taste and aroma. The lager is golden yellow, with a delicate to pronounced hop aroma, moderate to medium bitterness, a full taste and rich foam. According to the specification, the fine bitterness comes from the hop varieties used.

Production

The beer is made from malt from two-row spring barley, water from the municipal supply and the hop varieties semi-early Saaz red hops and Magnum as pellets and extract. According to the specification, the process comes from the Old Brno brewing tradition: two-stage decoction mashing and two-stage fermentation.

The malt is ground and mashed in with warm water. Twice, part of the mash is heated in the mash kettle, boiled and pumped back. In the lauter tun the insoluble parts form a filter layer through which the wort runs off. In the wort kettle it is boiled with hops, cleared of trub, cooled, aerated and fermented with bottom-fermenting yeast. The main fermentation takes place in cylindro-conical tanks; secondary fermentation takes place in such tanks (draught beer) or in storage tanks in the cellar (lager). The beer is then filtered with kieselguhr, flash-pasteurised and filled into bottles or kegs under carbon dioxide from the main fermentation.
